Firm, soft or silken tofu: which one fits your dish?

Tofu is not one product sold in different pack sizes. Its water content and production method determine whether it can be sliced, fried, blended or eaten with a spoon. Terms such as “soft,” “silken,” “firm” and “extra firm” are not completely standardised between manufacturers, so check the product description and suggested use as well as the name.

Firm tofu

Firm tofu contains less free water and can be cut into cubes or slices. Pat it dry when you want browning. Gentle pressing may help with some products, but it is not always necessary. A hot pan, enough oil and space between the pieces often matter more than a very long marinade.

Soft tofu

Soft tofu is fragile. It works in dishes that do not require vigorous stirring, including soups and gently simmered meals. Cut it with a sharp knife and move it with a broad spoon or spatula.

Silken tofu

Silken tofu has a particularly smooth structure and may be sold in a shelf-stable carton or chilled tray. It can slide into soup, be served cold with a sauce or be blended into creamy dressings and desserts. Pressing would destroy the texture you bought it for.

Plain, smoked and fried tofu

Smoked tofu is already seasoned and generally firmer. It is convenient in sandwiches, salads or quick pan dishes but tastes very different from plain tofu. Fried tofu puffs absorb sauces exceptionally well and are another distinct product.

How to brown firm tofu

  1. Pat it dry and cut evenly.
  2. Heat the pan and oil first.
  3. Leave space between pieces.
  4. Wait for one side to brown before turning.
  5. Add wet sauce near the end so the surface does not immediately soften.

Allergens and storage

Tofu is made from soybeans, and soy is a declared allergen. Refrigerate after opening and follow the packet instructions. Do not use fresh tofu when the package, smell or surface appears abnormal.
