Poke originated in Hawai‘i and originally referred to cut, seasoned fish. The bowls popular in Germany are usually modern developments made with sushi rice, soy sauce, sesame, edamame, avocado and different main ingredients. We therefore describe this collection as Hawaiian-inspired with modern Asian flavours, not as five traditional Hawaiian recipes.

Why poke bowls are so easy to make your own

Poke bowls are great when everyone wants something slightly different. Prepare one batch of rice and vegetables, then let each person choose salmon, chicken, tofu or prawns and finish the bowl with their favourite sauce.

The simple poke formula

  1. 1 base: sushi rice, jasmine rice or salad
  2. 1 main ingredient: salmon, tuna, chicken, tofu or prawns
  3. 3–4 fresh elements: cucumber, avocado, edamame, carrot, red cabbage or mango
  4. 1 sauce: soy-sesame, spicy mayonnaise, teriyaki or chilli-lime
  5. 1 finish: sesame, nori, spring onions or pickled ginger

Important notes about raw fish and cooked rice

Use raw salmon or tuna only when a trustworthy seller specifically recommends it for raw consumption. Vulnerable groups should choose cooked versions. Cool cooked rice promptly, refrigerate it and do not leave it at room temperature for hours.
