Pak choi is stir-fried over high heat with garlic, soy sauce and sesame oil so the stems stay crisp.

Ingredients

  • 600 g pak choi
  • 4 cloves garlic, thinly sliced
  • 2 tbsp neutral frying oil
  • 2 tbsp soy sauce
  • 3 tbsp warm water
  • 1 tsp sesame oil
  • ½ tsp sugar

Method

  1. Wash the pak choi, separate stems from leaves and slice the garlic.
  2. Stir-fry the stems over high heat, then add garlic and leaves.
  3. Season with soy sauce and serve directly from the wok.

Beginner tips

  • Dry the pak choi well and cook the thicker stems before the leaves so both finish together.

Substitutions and variations

  • Use choi sum or Chinese cabbage, and add chilli oil only at the table if different heat levels are needed.
