Pak choi is stir-fried over high heat with garlic, soy sauce and sesame oil so the stems stay crisp.
Ingredients
- 600 g pak choi
- 4 cloves garlic, thinly sliced
- 2 tbsp neutral frying oil
- 2 tbsp soy sauce
- 3 tbsp warm water
- 1 tsp sesame oil
- ½ tsp sugar
Method
- Wash the pak choi, separate stems from leaves and slice the garlic.
- Stir-fry the stems over high heat, then add garlic and leaves.
- Season with soy sauce and serve directly from the wok.
Beginner tips
- Dry the pak choi well and cook the thicker stems before the leaves so both finish together.
Substitutions and variations
- Use choi sum or Chinese cabbage, and add chilli oil only at the table if different heat levels are needed.
